Culinary Arts Assignment List 2017-2018
September 5: Take notes on section 1-1 PowerPoint, Careers in Food Service. Sort cooking equipment, watch video on sharpening knives.
September 6: View PowerPoint 1.1 "Welcome to the Restaurant and Food Service Industry and discuss. Wash cooking equipment and work area, sharpen knives.
September 7: Wash equipment, clean area and sharpen knives.
September 8: Dice carrots, celery, onions and leeks, add a bouquet garni and save for making a mirpoix.
September 11: Simmer Mirpoix with olive oil, garlic and oil, strain and save stock for squash soup. Peel and cube butternut squash to cook tomorrow.
September 12: Boil squash and drain. Heat stock from yesterday. Puree in squash and any spices. Fiinish heating and serve.
September 13: PowerPoint notes 1-3. Record Land O Lakes apple pie recipe in notebook. Recalculate recipe for 8 inch pie pan using circle area proportion model.
September 14. Pie pan calculations used to adjust your apple pie recipe from a 9 inch pan to an 8 inch pan. 1-3 PowerPoint notes.
September 15. Make applesauce.
September 18: Make pie dough and and filling refrigerate for tomorrow.
September 19: Preheat oven. Roll out dough, add filling and bake.
September 20: PowerPoint notes on "Entrepreneurship Opportunities in Foodservice."
September 21: Pit plums and freeze. Prepare apple pit mix and freeze. Study notes for test.
September 22: Test over Chapter 1 notes.
September 25: Safety notes. Write down pear muffin recipe in notebook.
September 26: Notes: "What Upsets Employers Most." Star watching video "Julie and Julia."
September 27: Continue watching video. Prepare for making spiced pear muffins.
September 28: Make spiced pear muffins.
September 29: Eat and evaluate the muffins you made yesterday. Grate zucchini and freeze for a later project.
October 2: Notes 7-2. Watch, "The Mind of a Chef--Noodle." Prepare a recipe and list of ingredients for your Ramen noodle dish.
October 3: Discuss preparations for tomorrow's Ramen noodle dish. Assembly at 9:15.
October 9: 8-1 PowerPoint Notes on Food Handler Safety. Recipe notes for Macaroni and Cheese with Mornay Sauce. Go over Roux, Bechamel and Mornay sauce preparation.
October 10: Make macaroni and cheese with Mornay sauce.
October 11: Video, "Food--Delicious Science. Short review of notes.
October 12: Chapter 7 Test.
October 16: Hand back tests. Read HACCP Applications. Record yellow cake recipe in notebook.
October 17: Make yellow cake and frost.
October 18: Season and cook chicken for enchiladas.
October 19: Shread chicken and make sauce for enchiladas.
October 20: Assemble and bake chicken enchiladas. Take 8-3 notes.
October 23: Read handout on knives. Take notes from PowerPoint on parts, types and uses of food preparation knives. Write down recipe for buttermilk pancakes.
